Flatbread

Ok, I know I talk about flourless foods or at least recipes made with almond or coconut flour instead, but this is a good old fall afternoon go to, perfect for football games or just hanging out. And, the possibilities are endless with this one. Know that just about anything can be a topping for flatbread. You can go traditional with tomatoes and pepperoni, go Hawaiian with pineapple and ham, treat yourself to bbq chicken, or do a white flatbread with spinach and feta or a creamy alfredo sauce...Questions? Just ask. :)

Ingredients

  • 1 pkg RapidRise yeast
  • 1/2 tsp. sugar
  • 1 3/4 c. flour
  • 1 T. fresh thyme
  • 1 tsp. olive oil
  • 3/4 c. or more warm water (about 110')

Extras

  • Tomato - sliced or diced / Balsalmic vinegar
  • Spinach / Feta cheese
  • 1 Handful of fresh basil / Grilled chicken
  • Grilled chicken / roasted red peppers or sun-dried tomatoes
  • Mozzarella cheese / Basil pesto


How to Do It



Combine yeast, sugar, flour, and salt in food processor. Add water in a steady stream until a ball forms. You may not need all of the water, you may need slightly more. It will depend on your altitude and any number of other factors. Just take it slow and you'll know when it's ready.

Once you get the ball formed, lightly flour a countertop and knead the dough until smooth. Then coat a bowl with a light layer of olive oil, place dough in the bowl and cover with a towel and set aside in a dark place to rise about 45 minutes.

After the dough has risen, punch it down and knead lightly on a very lightly floured surface (too much flour will make it a little tough). Roll the dough out into rectangles about 4 inches wide. Place them in the over on a baking sheet for about 5 minutes, OR you can cook the min a large fry pan lightly oiled on the stove, 2 minutes on each side.

Once baked, top with your favorite toppings and bake another 2-5 minutes or until warm/melted if desired.

OMG Salmon Tacos!

These are AMAZING. I know... I said that about the banana muffins...but for REALS. These are A-Mazing. This will work with white fish as well, as I know a lot of people don't like salmon or don't want to mess with de-boning them, but whatever fish you choose, you're sure to love these. And they're great for any time of year.

Ingredients

  • 1 pound salmon, cod, halibut, or other fish of choice (tilapia works, but it's not a great fish...)
  • 1/2 cup coconut flour
  • 2 tsp. salt (more if you like)
  • 1 T garlic powder (or less if you don't like the taste, but the benefits outweigh the taste imo)
  • 2 tsp cumin
  • 1 cup coconut oil or so for frying

The Sauce

  • 1/2 cup mayonnaise
  • 1 T lime juice (from fresh lime, about 1 whole lime)
  • 1 teaspoon dried oregano
  • 1/2 tsp. cumin
  • dash chili pepper
  • 1/4 teaspoon honey (optional, but I highly recommend it)


How to Do It


For the sauce, simply mix all the sauce ingredients together, whisking until smooth. Set aside.

For the fish, rinse and pat dry after de-boning and skinning (if necessary).

Put coconut oil in large fry pan or wok and heat on med/high heat until hot. Mix together all the dry ingredients into a medium bowl. Then, cut the fish into 1 inch wide strips (as long as you like or cubed if you prefer). Push the fish slices into the dry ingredient mix, covering thoroughly. Carefully add fish to coconut oil once it has reached temperature. If fish does not boil or sizzle when placed in oil, allow it to heat more before adding more fish. When oil is to temperature, add fish and let sit for about 2-4 minutes before turning over to other side and heating evenly. Once cooked, remove from oil with metal tongs and place on paper towel covered plate to absorb extra oil. Continue until all fish pieces are cooked.

To eat, you can use basic store bought or homemade flour tortillas or make Paleo tortillas. Use homemade salsa (I'll post a recipe later) or your favorite store bought, and add the sauce we made at the beginning. You can add a little extra lime if you like as well...it's really gooooood!
